Make Quick Dhokla in 30 minutes

Hello Friends, Today I will share the recipe of a very popular Gujarati dish. It is very light, spongy, steamed, juicy and healthy food made by fermenting gram flour with curd. It is a breakfast recipe, eaten mostly as snacks. It needs very convenient ingredients present almost all time in your kitchen. You can either steam it in the cooker or bake it in a microwave also. It is similar to the cake so some ingredients with are same as the cake. While the traditional khaman dhokla is left for fermentation for 4-5 hours, but I am sharing a quick recipe for it. 🙂

Dhokla

Ingredients required:

Serves 6

For batter

  1. Besan (2 cups)
  2. Curd/yogurt (1 cup)/ for vegan recipe, you can add 1 cup water instead
  3. Fresh green chilies (2 medium sized)
  4. Ginger paste (1 teaspoon)
  5. Water (1 cup)
  6. Turmeric (1/2 teaspoon)
  7. Salt (1/2 teaspoon)
  8. Sugar (1 teaspoon)
  9. One Lemon
  10. Baking Soda (1/2 teaspoon)
  11. Baking Powder (1 teaspoon)
  12. Oil (2 teaspoons)

For tempering

  1.  Oil (2 teaspoons)
  2. Sugar (2 teaspoons)
  3. Mustard seeds (1/2 spoon)
  4. Water (1 and a half cup water)
  5. Curry leaves (4-5)
  6. Lime juice (2 teaspoons)

Recipe:

10 mins for preparation

20 mins cooking time in cooker

  1. Mix thoroughly besan/gram flour and curd till no lumps are left.
  2. On the other side, Put the cooker on gas and add water to make a 1-inch level and put a very plate in it and cover it without a whistle.
  3. Put in turmeric, salt, ginger paste, chopped green chilies, sugar, lime and oil and mix well in one direction using a beater.
  4. Then slowly add water to make it make batter neither thick nor very flowing. If somehow it became a more flow, then you can add some more gram flour and mix it.
  5. Now add baking soda and baking powder and mix well.
  6. Pour the mixture into a greased bowl and put it in a cooker and leave it for 20 mins (You can also bake it in a microwave by pouring batter in microwave safe bowl and baking for 15 mins at 500 watts. :))and proceed to make tempering.
  7. Tempering: Take oil in a pan on flame and add mustard seeds, curry leaves, asafoetida and green chilies. Add water and give it a boil and then add sugar and lime water. Let it cool.
  8. Then check your Dhokla by inserting a toothpick in it. If it comes clear, It means your dhokla is ready.
  9. Now serve Dhokla by adding tempering and coriander leaves.
