If you are also fond of rice, Let’s make them differently

First of all thank you so much for passing by this little blog.

Today’s post is about rice. Almost everyone like rice in different forms. I like them as Pulao. I love to indulge in cooking and It is like therapy, putting your heart and fondle your senses with the outcome. Despite my few tries are a flop, but I continue to strive. Since today’s recipes are sure shot on the first try, as a result, I am sharing these appetising rice recipes. None of the below recipes would take more than 30 mins so that you can make them quickly when hungry 🙂

Below recipes serve 2-3 persons.

  1. Matar (peas) Pulao

Typical Indian dish cherished in almost all families.

Preparation time: 5 mins, Cooking time: 15 mins.

Ingredients we need:

  1. Basmati Rice (1 cup)
  2. Peas (half a cup)
  3. Chopped Potato (2 medium sized)
  4. Fresh Coriander leaves (1 bunch)
  5. Sliced Green chili (2 medium sized)
  6. Oil (half cup)
  7. Curry leaves (7-8)
  8. Spices and salt: turmeric (1/4 tablespoon), Red chili powder (1/2 tablespoon), Coriander powder( 1 teaspoon) and salt (1.5 teaspoons)

Recipe

  1. Soak the rice in water for almost 30 mins
  2. Heat the oil in pan and to know if oil is hot add cumin seeds
  3. Add green chili and curry leaves and saute
  4. Add peas and potato saute it for 2 mins
  5. Add red chili powder, then add water
  6. Let it boil and then add drained rice and salt Cover the pan and let it cook for 15 mins
  7. Garnish with coriander

Matar Pulao tastes well with curd and mango pickle. It’s simple and tasty dish ready in less than 30 mins. You can always alter it by adding other veggies like cauliflower, capsicum, tomato, beans, etc. or cheese and nutrela according to your taste and convert it to mix the veg rice. 🙂

2. Lemon Rice

Lemon rice is ready in 10 mins if you have cooked rice.

Ingredients needed

  1. Boiled rice
  2. Chopped onion (2 medium sized)
  3. Fresh Curry leaves(7-8) can also use dry leaves
  4. Split chickpeas (chana dal) 2 tablespoon
  5. Lemon juice (2 teaspoons)
  6. Fresh coriander leaves for garnishing
  7. Dry Red chili ( 2 medium sized)
  8. Oil (1 big spoon)
  9. Chopped green chili (2 medium sized)
  10. Spices and salt: Turmeric (1/4 teaspoon) and salt as taste

Recipe

  1. Heat the oil in pan and then add mustard seeds for popping sound
  2. Add red chilies and split chickpea, saute until it turns light brown
  3. Add curry leaves, green chilies and onions, Saute until nice golden onions
  4. Then add turmeric, red chili pepper and salt
  5. Mix the rice in it and cover the pan for 2 mins
  6. Add lemon juice and mix well
  7. Garnish with coriander

Lemon rice is eaten alone. They are perfect for breakfast or evening tea.

3. Curd(yogurt) Rice

Curd rice is very popular in South India and is part of their meal. Since it contains a good quantity of yogurt, therefore, is advised for an upset stomach. It doesn’t take more than 10 mins and It is one of the reasons I like them so much.

Ingredients needed

  1. Curd/yogurt (2 cups)
  2. Boiled rice (1 cup of raw rice)
  3. Urad dal/split chickpea (2 teaspoons)
  4. Peanuts (1/3 cup)
  5. Dry red chili (2 medium sized)
  6. Curry leaves (7-8)
  7. Coriander leaves to garnish
  8. Chopped onion (1 medium sized)
  9. Salt to taste

Recipe

  1. Add curd, coriander leaves, salt and green chili to rice and mix well
  2. Heat the oil in pan and add mustard seeds and red chili
  3. Add chickpea and urad dal and saute until they turn light brown
  4. Add peanuts and saute until they roast
  5. Add curry leaves and onions, saute until onions turn golden
  6. Then add this to curd-rice mixture

Curd rice is palatable, light and good for the stomach. They are mostly eaten at night or during any hour for a light appetite.

4. Tamarind Rice

Tamarind rice is also a South Indian dish and is commonly known as pulihora. Tamarind adds tangy flavor to the rice. 

Ingredients

  1. Boiled rice (1 cup when raw)
  2. Mustard seeds (1/2 teaspoon)
  3. Tamarind pulp (1/2 cup)
  4. Oil (1/3  cup)
  5. Curry leaves (7-8)
  6. Peanuts (15-20)
  7. Dried red chili (2 medium sized)
  8. Split Chickpeas (chana dal)
  9. Spices: Chili powder
  10. Salt to taste

Recipe

  1. Heat the oil in pan and then add mustard seeds to make popping sound and then add red chili and curry leaves
  2. Add peanuts and saute for 2-3 mins
  3. Add onions and again saute till it turns golden
  4. Add tomatoes and saute for few mins
  5. Then add red chili and salt
  6. Add tamarind juice and water and let them boil
  7. Then add rice and mix well
